Sauteed Chicken and Fall Veggies
Tina said, "Why don't you just pick up a Deli-Chicken from King's Sooper." - So I did... but then remembered that we had some Zuchinni and Summer Squash at home, so I might as well saute that up as well. And while I'm doing that, it would be good with some Leeks (which I'm into lately) and some mushrooms. Then once I got home and started that I figured, might as well add some red-wine and throw in the chicken for a few minutes. :-)

1 Whole Roasted Chicken - drumsticks and wings intact, all other meat removed from the bones.

Pour 2 Tbs Olive Oil in large skillet and heat.
Add in 1 Leek sliced thin and 3 thin slices Red Onion, cut in 1/6s. Saute until transparent - approx 2 minutes.
Toss in 3 Garlic Cloves, mince and stir.
Add in 2 Zuchinni and 1 Summer Squash, sliced thin and sautee until tender.
Add in 10 Mushrooms, cut in 1/4s.
Season with Kosher Salt and Pepper

Add in the chicken, pour in 1/4 C Red Wine and simmer for 10 minutes.

Perhaps European in nature? Could easily be Italian if you added some Italian spices and maybe a little Tomate Paste.

Could easily substitue raw chicken or bonless chicken breast and just extend the cooking time.

Depending on the size of the chicken, feeds 4+. Takes about 30 minutes (mostly cutting up the veggies).
