Italian Tomatoe & Cucumber Salad
Went and saw The Last Samurai with Jaime last night. Got home around 10:00 and was hungry, so whipped this up. Tomatoe and cucumber sounded good. I've been making this in a cerviche style lately, but that is kind of acidy. So I decided to use olive oil (which led to the italian theme) and then added some lime juice anyway. This added some acidity, but not too much. Enought to cut the olive oil and make it a very light - but the olive oil and oregano gave it an italian flare.

1 Tomatoe, diced
1/2 a Cucumber, diced
2 thin slices Red Onion, diced
Some Black Olives, cut in half
Kosher Salt
Black Pepper1 ts dried Oregano - crushed between the fingers
1 Tbs Olive Oil (or so)
Juice of 1 Lime

Mix and eat!

crushed between the fingers - If I'm using dried spices, I don't like to just toss them in, because they are too "flaky". But I don't want to use powder, because it doesn't mix as well. So I just crush the leaves between my fingers.
