Red Raspberry Glazed Pork Chops
Had some pork chops (boneless) in the freezer and I had to make dinner. Didn't feel like something "plain", but wanted to use what was on hand. So I decided to do a fruit glaze on them. Turned out really good... and was easy
Preheat oven to 350.
6 boneless pork chops (1/2 in or so... not thin, but not real thick)
4 tbl raspberry perserves
2 tbl oil
2 tbl butter
chopped: red onion, green onion, 2 garlic cloves
Glaze:
Heat oil in sauce pan. Add onion and garlic and sautee until soft/translucent
Add in butter and melt
Whisk in perserves
Sauce should be syurp consistency. Add more perserves if too thin. More oil if too thick.
Put chops on a baking pan and season with salt and pepper to taste.
Brush/cover top of chops with 1/3 of the glaze.
Bake for 20 minutes, turn, repeat.
Bake for another 20 minutes, turn again and coat top a 2nd time.
After 20 minutes (one hour total) chops should be done.
Broil for a few minutes if needed so that glaze is not too moist.
